Buying the perfect gift for dad can be difficult. Instead of buying your dad something, try your hand in the kitchen for a gift he can eat. Four In Your Corner went to Get U Cooking LLC to find a tasty alternative to the standard father's day gift. Founder and Owner of Get U Cooking LLC, Ann Shepard, showed For in Your Corner her recipe for fish tacos and black bean salsa.
Black bean Salsa
Fresh Corn , off the huskOff the husk
1 can of Black beans
1 cup red bell peppers
1 cup yellow bell pepper
1 avocado
1 tbsp salt
1/2 cup lime juice
1 pinch of salt
Chop vegetables finely. Mix the corn, black beans, peppers and avocado in a bowl. Add salt and lime juice to taste.
Fish Taco's
1 Ib cod
Soft tortilla shells
2 eggs
1/2 cup milk
2 cups of corn flakes
2 cups of flour
Cooking oil
2 cups mayonnaise
1/2 cup Sriracha
1 cup chopped red cabbage
1 cup chopped Napa cabbage
1 tbsp salt
1/2 cup lime juice
1 pinch of salt
1 cup red bell peppers
1 cup yellow bell pepper
Mix egg with milk and mix together thoroughly. Combine crushed corn flakes with flour. Take thawed cod pieces and soak lightly in cod before coating in corn flakes and flour. Place each piece in greased pan. Turn until cooked thoroughly.
Mix together peppers and cabbage. Add lime juice, 1 cup of mayonnaise and salt for coleslaw. Mix 1 cup mayonnaise and sriracha together in a separate bowl. On tortilla roll, take sriracha and mayonnaise mixture and put a light layer on bottom of tortilla. Place small pieces of cod in shell. Add coleslaw to taste.
