Justin Fields was born in New York City. Growing up in the Bronx, he was influenced by the hustle and bustle and “melting pot” atmosphere NYC is known for. From a young age he had a very creative personality, getting involved in art classes, reading comic books and emulating artists of the time. The multi-cultural environment mixed with his love to eat would be the building blocks of his culinary journey.
In 2013, Justin transitioned to Corporate Chef of Innovation for Bonefish Grill, working in Research & Development at the Bloomin Brands Home Office, Tampa Florida. Justin culinary style is strongly influenced by his family’s adventurous palette, as well as his travels throughout the states and the Hawaiian Islands. He brings an artist’s touch to plate presentation along with a love of ethnic cuisines, which when paired with Roy’s Fusion approach makes for an adventurous gastronomic journey.
