Spaghetti Frittata or "Breakfast AND Dinner Tonight"

 

Ingredients needed:

 

 ( Please base your recipe loosely on this as far as meat and veggies)  Use what you like! (Bacon or No Meat) (Spinach or Power Greens)

 

1 cup of  milk - I used 1%  I have also used Almond milk with great results!

 

3 eggs - I cut out extra yolks for health reasons and it was still great.

 

1 cup  grated parmesan cheese 

 

2 cups fresh broccoli - again use what you like

 

½ lb Boars Head Black Forest Ham - again you can use what you like

 

1 package of Hidden Veggie Pasta - I've used gluten free pasta and it works great!

 

 

Preheat oven to 425 F.

 

Cook your pasta in boiling water (salted!) until al dente.  Let cool.  

 

Chop up your ham into bite sized pieces and saute in a frying pan until it becomes a bit caramelized.  Let cool before adding to the egg mixture.

 

I like to steam my broccoli on the recommended microwave settings before adding it to the egg mixture.  You can add it raw as well.  If you do steam let it cool before adding it to the egg mixture

 

In a medium mixing bowl add your milk, eggs, ¾ of your parmesan cheese, and Morton's Seasoning.  Whisk until combined.

 

Add your ham and broccoli and mix to combine.

 

Add your pasta and mix to combine.

 

Dump your whole yummy creation in to an oven safe casserole dish and sprinkle with the remaining ¼ parmesan cheese.

 

Cook for 20-30 min on 425.  The oven light is your friend on timing.
