The Local: Quinoa Salad

Preparation:

Quinoa Salad

Serves: 4 People
1 Cup Quinoa
3 Cup Water
Rinse quinoa and cover with water.  Bring to boil and simmer for 20 minutes.  
Spread quinoa on sheet tray to cool.

 
For the Salad:
2 Cups Cooked Quinoa
1/2 Cup Corn Kernels, Raw
1/2 Cup English Cucumber, Seeded and Sliced
1/2 Cup Grape Tomatoes, Cut in Half
1 Tablespoon Greek Oregano
2 teaspoon Olive Oil
1 teaspoon Balsamic vinegar
1/2 teaspoon Kosher Salt
Mix everything in a bowl.  Serves 4 people
